Chocolate Peppermint Energy Bites

1 cup raw cashews
1/2 cup slivered almonds
1/4 tsp salt
1 Tbsp unsweetened cocoa powder
1 1/2 cups pitted dates, tightly packed
1/4 cup shredded unsweetened coconut
1/4 cup semi-sweet chocolate chips (dairy free)
2 drops Young Living peppermint essential oil

Optional: 2 scoops Natural Citizen Nutritional Booster of choice

In an 11-cup (or larger) Cuisinart food processor, blend the first four ingredients until they form a powder (about 30 seconds). Add the remaining ingredients, and blend until the dough starts to ball up (about 3-4 minutes). Line a baking sheet with wax paper and shape dough into balls or press flat. Refrigerate for at least one hour and then slice (if pressed flat) and transfer to an airtight container. Keep refrigerated for up to 2 weeks.
