Gluten Free Coconut Pancakes


Gluten Free Coconut Pancakes

2 cups Namaste Foods gluten free pancake & waffle mix
1 container Siggi's coconut 2% yogurt
1/2 cup water
2 eggs

Heat a large skillet over medium heat. Spray with a preservative free cooking spray. (I use Chosen Foods avocado oil spray.) Mix all ingredients together and blend well. Divide batter evenly into pancakes on griddle/skillet. Cook for 4-5 minutes on each side until golden brown. Let cool on a wire rack. Top with plain Siggi's yogurt, raw honey, and cinnamon.

If you or your family doesn't need to eat Gluten Free, then feel free to substitute waffle mix of your choosing. As a registered dietitian, I encourage my clients to choose whole wheat whenever possible.
