High Protein Cookies

You'd never believe me if I told you these High Protein Cookies have no flour and a pretty surprising main ingredient! (Recipe adapted from www.chocolatecoveredkatie.com)

 

High Protein Cookies

1/2 cup rolled oats
2 Tbsp unsweetened applesauce
1 can low sodium garbanzo beans, rinsed and drained
1 1/2 tbsp Chosen Foods avocado oil
1 1/2 tsp vanilla extract
1/4 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1/2 cup brown sugar, packed

Blend all ingredients in food processor for about a minute until batter is a smooth consistency. Remove blade.

Stir in any of these flavor combinations:

Chocolate chip: 1/2 cup dairy free chocolate chips

Oatmeal Raisin: 1/2 cup raisins, 1/4 tsp nutmeg, 1 tsp cinnamon

White Chocolate Cranberry: 1/3 cup dried cranberries, 1/3 cup dairy free white chocolate chips, 1 tsp cinnamon, 1/4 tsp nutmeg

Drop batter into lined muffin cups and bake at 350 for 20-25 minutes until tops start to firm up. Let sit in pan for 5-10 minutes. Store in muffin liners.
