Everything from BLT pinwheels to BLT lettuce wraps with avocado… I love them! This recipe is so simple to make and is equally refreshing for those hot summer afternoons or evenings when you don’t feel like heating up your kitchen!

I used to love blt pinwheels!!

Growing up, I remember we would eat all sorts of “pinwheel” type tortilla rolls and I loved them. One of my favorites was BLT pinwheels. We’d take a tortilla and roll up some cream cheese, bacon, and lettuce. So good! And yes, I realize it’s not really a BLT since I wouldn’t eat the tomato… it took me a few decades to learn to enjoy them, what can I say?

Why I love a good low carb blt without bread

Most sandwich type lunches involve a sandwich, wrap, or other source of bread along with a carbohydrate side like chips, crackers, fruit, etc. In my early 20s I started to notice my blood sugars were just really difficult to manage when I’d eat more carbohydrate at lunch time, so I learned to make some delicious lettuce wraps and could then fully enjoy the carbs from things like chips and crackers. Side note: Am I weird that I prefer chips and crackers to bread? Anyways…

I am all for eating bread, don’t get me wrong there. And there is NOTHING wrong with enjoying a sandwich with bread AND a carbohydrate side. However, there’s also nothing wrong with wanting a BLT lettuce wrap with avocado instead 😉

How to make BLT lettuce wraps with avocado ranch dressing

To make these BLT lettuce wraps with avocado ranch dressing you need to have a few things out and ready to go and then it’s just assembling everything and you’re good to go!

Make sure you have:

  • Lettuce leaves
  • Cooked bacon
  • Sliced tomatoes
  • All of your dressing ingredients

Arrange your lettuce leaves flat on the counter. 

Mash up one half of the large avocado and spread 1-2 Tbsp mashed avocado on to each lettuce leaf.

Add 2-3 tomato slices to each lettuce leaf.

Then add one slice of bacon to each lettuce leaf.

Roll each lettuce leaf up however you’d like depending on the shape of the lettuce. You can secure them with a toothpick if you’d like.

To make the dressing, add all of the remaining ingredients, including the other half of the avocado, and blend them together in a blender or food processor. Pour the dressing into a small dish for dipping. 

Enjoy your BLT lettuce wraps with avocado ranch dressing by dipping the wraps in the dressing or drizzling the dressing on top.

Ingredients
