It’s Taco Tuesday!
Did you know those convenient little taco seasoning packets at the grocery store usually have a bunch of additives, preservatives, and other things in them that are NOT spices? Did you know it’s SUPER easy to make your own at home? And I’d be willing to bet you already have all the ingredients on hand! This recipe makes the perfect amount of seasoning for about 2-3 pounds of meat or vegetables. Checkout my homemade taco seasoning recipe in the image below.
Taco Night #1: Brown 1-2 lbs ground beef/chicken/turkey with half the taco seasoning recipe. Put that on homemade tostada shells (corn tortillas under the broiler for a few minutes) and top with toppings of choice!
Taco Night #2: Brown 1-2 lbs ground beef/chicken/turkey with half the taco seasoning recipe. Serve with lettuce/greens, beans, cheese, and little pico de gallo for a yummy Taco Salad!
Taco Night #3: Cook and shred three chicken breasts. Mix with half of the taco seasoning recipe. Use as a yummy filling in homemade quesadillas.
Taco Night #4: Bust out our slow cooker! Slow Cooker Taco Chicken with black beans and corn
6 medium chicken breasts
3 cups water
1 can No Salt Added Organic Black Beans
1 10oz package Organic Frozen Corn
1 onion, chopped
1/4 cup taco seasoning
Combine all ingredients in slow cooker. Cook on high for 2-3 hours or low for 4-5 hours. You can serve chicken breasts whole as shown, or shred and use in tortillas or taco shells.

Made this when my son was home from college and it certainly passed the taste test! I will use this recipe from now on. Very easy to put together with ingredients I had in my cupboard.
