Low Carb Broccoli Ranch Salad with Bacon

My low carb broccoli salad is so easy to throw together and perfect for a quick lunch or easy spring or summer time side dish!

And, probably the best thing about this low carb broccoli salad is the secret ingredient: vidalia onions! Their lightly sweet flavor and crunch are the perfect finishing touch!

This is officially the only salad recipe you need for this summer! When I say I can eat low carb broccoli salad on repeat, I’m not kidding. 

The flavors combine together so well and the different textures are perfect together. 

And the star ingredient, is deinfitely the sweet vidalia onions!

Sweet Vidalia Onions are less pungent than your basic white onion. They have aromatic notes and a sweet, mild flavor which is just perfection. In addition to recipes like this, they are perfect for grilling and frying!

Broccoli bacon salad recipe

This is a very simple low carb broccoli salad recipe. After you’ve prepped the ingredients, you just mix everything together. That’s literally it. You can serve it right away or let it chill for a few hours before serving. Whichever you prefer. 

Do you steam broccoli for broccoli salad recipe?

No, no need to cook the broccoli here. Just chop up your broccoli (or buy it already chopped) and it’s ready to be added to your bowl.

How many carbs in broccoli and onions?

The vidalia onions really help balance out the bitterness of the broccoli so we don’t need to add any additional seasonings besides the small bit of Ranch dressing. I prefer the Bolthouse Farms Classic Ranch dressing (Walmart affiliate link as part of the Walmart Creator program).

Broccoli and onions are both loaded with fiber. One cup of broccoli has 6g carb and 2.5g fiber. One medium onion has 12g carb and 2g fiber.

Ingredients

  • 1 sweet vidalia onion sliced thin
  • 4 cups roughly chopped broccoli
  • ¼ cup ranch dressing
  • 6 slices uncured bacon cooked and chopped small
  • Salt & pepper to taste

Instructions

  • Prep all ingredients as listed above.
  • Combine all of the ingredients in a bowl and toss to combine.
  • Enjoy immediately or chill before serving.
