Superfood Vegetable Hash with Chicken

Superfood Hash

1 yellow onion, chopped
1 white potato, chopped
1 sweet potato, chopped
Avocado oil
2 Tbsp minced garlic
3 chicken breasts, cooked and shredded
Salt and pepper to taste
1 package kale/ brussel sprout slaw (I prefer Eat Smart slaws and salads)
Shredded cheese (optional)

Add chopped onion and oil to pan over medium heat. Let onion soften and sauté for about 10 minutes. Add potatoes and sauté for another 10 minutes. Add garlic, chicken, salt, and pepper. Sauté for additional 5 minutes. Add slaw and stir to combine. Continue heating until vegetables are desired texture. Divide into bowls and top with cheese if desired. Enjoy!
