Avocado Peanut Butter Toast

1 slice whole grain or gluten free bread

2 Tbsp mashed avocado

1/2 Tbsp chia seeds

1 Tbsp natural peanut butter of choice

Unsweetened coconut

Toast bread to desired crispness. Spread avocado on half of the toast and peanut butter on the other half. Carefully pour chia seeds in the center, as shown. Sprinkle peanut butter side with unsweetened coconut. Enjoy!
