Let’s build a lower sugar salty sweet snack board for Halloween!

I start by focusing on my lowest sugar/no sugar foods and build up form there. This way we can still include those fun sweet treats but in smaller amounts. Her’s what I put on my board:

Decorations: small containers and mini pumpkins
Cheddar @catalinacrunch Crunch Mix
@crunchmastercrackers multi-seed crackers
Pretzel sticks
Graham crackers

Spooky Halloween Low Sugar Mocktail idea!

1/4 cup frozen blueberries
1 fl oz. dark colored juice (I recommend grape!)
Juice from 1/2 lime
6-8 fl oz Plain sparkling water

Combine all your ingredients in glass and enjoy! And, you can even add on a fun salted rim if you’d like!

Avocado salmon power bowls! It’s a delicious blood sugar friendly lunch with 11g fiber and 26g protein.

Dressing ingredients
1/2 Tbsp apple cider vinegar
1/2 Tbsp avocado oil
1/2 tsp maple syrup
1/4 tsp garlic powder
Pinch of salt and ground pepper

6 oz salmon fillet
1/4 cup cooked quinoa
1/4 cup canned chickpeas, drained
1/4 cup Kalamata olives
1/4 cup chopped cucumbers
1/4 cup halved grape tomatoes
1/4 cup sliced red onion
2 Tbsp crumbled feta cheese
1/2 Tbsp chopped basil
1/2 medium avocado

Each serving provides: 35 g total carbohydrate, 11g fiber, 7g sugar, and 26g protein

Blood sugar friendly cornbread recipe! I love this healthier take on cornbread. It’s flavorful and simple to make!

1/2 cup almond flour
1/2 cup rolled oats, ground up
1/2 cup yellow cornmeal
1/2 cup granulated sugar (can sub with a sugar alternative if preferred)
1 tsp salt
1 1/2 Tbsp baking powder
1/3 cup unsalted butter, melted
2 large eggs
1 cup plain low fat Greek yogurt

Instructions
Grease an 8×8 square pan and set it aside. 
Preheat your oven to 400 degrees F. 
In a large mixing bowl, stir together the almond flour, ground oats, cornmeal, sugar, salt, and baking powder. 
In a separate bowl, add your melted butter, eggs, and Greek yogurt. Mix together to combine. Then, add this mixture to the bowl with your dry ingredients and stir until your batter is fully combined. 
Pour your batter into your greased pan and bake for 30 minutes until the top has fully browned and a toothpick inserted into the center comes out clean. 
Serve and enjoy! 
Recipe makes 9 slices. Nutrition info per slice: Total carb: 22g, Fiber: 2g, Sugar: 12g, Protein: 7g

Lower Sugar Pumpkin Hot Chocolate Recipe:

1 15 fl oz. can unsweetened coconut cream
32 fl oz. unsweetened almond milk
1 15 oz. can pumpkin puree
1/2 Tbsp vanilla extract
1/4 cup unsweetened cocoa powder
1 Tbsp ground cinnamon
1/4 cup granulated sugar
Whipped cream for topping

Add everything to a pot on your stovetop and whisk together until fully combined. Warm on t he stove until it’s just about to boil. Carefully laden your low sugar hot chocolate into mugs and enjoy!

Makes 8 cups. Per cup: Total Carb: 17g, Fiber: 4g, Sugar: 9g, Protein: 2g

I’m a registered dietitian living with diabetes and I love bagels. And no, not some low carb or keto bagel, like regular delicious bagels. And today I’m gonna show you how I enjoy them without a blood sugar spike. I’m not afraid of a higher number of total carbohydrate because I know the fiber and protein they have slows down how quickly my body digests them… which means blood sugar spikes are less likely.

In a regular 21-35 day cycle, we see four phases: the menstrual phase, follicular phase , ovulation and luteal phase. In the first half, we are typically estrogen dominant which is a hormone that promotes insulin sensitivity. After ovulation, we see more progesterone which can promote more insulin resistance. As always, it’s important to remember that every person has their own unique patterns!

8 tips for decreasing diabetes related fatigue and increasing energy levels:

1. Take medications on time
2. Drink plenty of water
3. Get adequate sleep
4. Do not over-consume alcohol
5. Do some form of movement every day
6. Eat fat, fiber, and protein at each meal
7. Don’t eat carbohydrates by themselves
8. Don’t skip meals
