This crunchy pistachio chicken salad combines tender chicken, hard-boiled eggs, dill pickles, celery, pistachios, Greek yogurt, and mayonnaise. It has 18 grams of protein per serving and takes about 15 minutes to prepare when the chicken and eggs are ready.
Combine all ingredients in a large bowl and mix until thoroughly until combined.
Serve on top of salad greens, as sandwiches, or by itself!
Chicken Salad will keep in an airtight container in the refrigerator for up to 3 days. Enjoy!
Notes
Four cooked chicken thighs should provide about three cups of chopped chicken.
Cooked chicken breast, rotisserie chicken, or well-drained canned chicken can also be used.
Taste the salad before adding the full amount of salt, especially when using salted pistachios.
Use certified gluten-free mayonnaise, yogurt, pickles, and seasonings if needed.
Store the finished chicken salad in an airtight container in the refrigerator for up to three days.

Storage:
Store the chicken salad in an airtight container in the refrigerator for up to three days.
Hard-boiled eggs can be prepared up to one week ahead, and the cooked chicken can be prepared three to four days ahead. Once everything is mixed, follow the shorter three-day storage window for the finished salad!
Keep the salad refrigerated until serving. Do not leave it at room temperature for longer than two hours, or longer than one hour when the temperature is above 90°F.
I do not recommend freezing it. The yogurt and mayonnaise dressing may separate, and the celery and pickles lose their crisp texture after thawing.
