Herb chicken meatballs with yogurt dill dip—high protein, low carb, and blood sugar friendly. A diabetes friendly appetizer and healthy party food idea.
In a large mixing bowl, add the ground chicken, grated carrots, green onion, parsley, dill, green bell pepper, garlic, salt, pepper, onion powder, oregano, and eggs. Mix thoroughly. The mixture may be a bit soft, but this is fine; it will bake up firm.
Line a baking pan with parchment paper. Roll the mixture into 18 balls (about 3 Tbsp in size each).
Bake for 25-35 minutes, or until the internal temperature reaches 165 degrees F.
While baking, make the yogurt dill sauce. Combine the non-fat Greek yogurt, dill, salt, black pepper, onion powder, fresh garlic, and lemon juice in a medium sized bowl.
Once the meatballs are done baking, serve with the yogurt dill sauce and enjoy!
