215oz canswhite beansrinsed and drained, I used Navy beans
1large cucumberdiced
1large bell pepperdiced
2cupssliced cherry tomatoes
1cupcut carrots
Instructions
To a large mixing bowl, prepare the dressing, add the parsley, cilantro, red wine vinegar, olive oil, black pepper, red pepper flakes, garlic powder, salt, finely diced shallot, finely diced jalapeno, and honey.
Mix to combine.
On top of this, add the rinsed and drained beans to soak in the flavors of the dressing while you chop the rest of the ingredients.
Add the cucumber, bell pepper, cherry tomatoes, and carrot to the large bowl.
