16ozcooked chicken breast choppedI used a rotisserie chicken for convenience
1/3cupdiced green onion
1medium jalapeño, dicedoptional
1cuplow-fat cottage cheeseblended until smooth
1/2cupNonfat Greek yogurt
1/3cupbuffalo sauce
1/2cuplow-fat shredded mozzarellafor mixture
1/2cuplow-fat shredded mozzarellato top
1tspblack pepper
1tsponion powder
1tspgarlic powder
Instructions
Preheat the oven to 375 degrees.
Dice the chicken, green onion, and jalapeno into small pieces.
In a blender or using a hand-held immersion blender, blend the low-fat cottage cheese until smooth.
In a medium-sized mixing bowl, add the chopped chicken, green onion, jalapeno, blended cottage cheese, Greek yogurt, buffalo sauce, mozzarella, black pepper, onion powder, and garlic powder, and mix until combined.
In a lightly greased pan (I used an 8x8 glass pan, but any pan will do) flatten the mixture into the pan and top with the remaining shredded mozzarella.
Bake for 18-22 minutes or until the cheese is lightly browned and the dip is bubbling.
Serve with fresh-cut veggies or your favorite crackers!
