- 16 oz cooked chicken breast chopped I used a rotisserie chicken for convenience
- 1/3 cup diced green onion
- 1 medium jalapeño, diced optional
- 1 cup low-fat cottage cheese blended until smooth
- 1/2 cup Nonfat Greek yogurt
- 1/3 cup buffalo sauce
- 1/2 cup low-fat shredded mozzarella for mixture
- 1/2 cup low-fat shredded mozzarella to top
- 1 tsp black pepper
- 1 tsp onion powder
- 1 tsp garlic powder
Instructions
- Preheat the oven to 375 degrees.
- Dice the chicken, green onion, and jalapeno into small pieces.
- In a blender or using a hand-held immersion blender, blend the low-fat cottage cheese until smooth.
- In a medium-sized mixing bowl, add the chopped chicken, green onion, jalapeno, blended cottage cheese, Greek yogurt, buffalo sauce, mozzarella, black pepper, onion powder, and garlic powder, and mix until combined.
