Instructions
In a medium-sized bowl, mix the almond butter, vanilla, almond flour, honey and water until a dough-like texture forms.
Roll the almond mixture into 1-tablespoon balls.
Place the balls on a plate, into the freezer for 10 minutes until firm.
In a microwave-safe bowl, microwave the chocolate chips in 30-second increments, mixing in between. This should take about 60-90 seconds. Once melted, dip the balls into the melted chocolate until coated, lift them out of the chocolate with 2 forks to let excess chocolate drip off, and create nicely coated truffles.
Place the coated balls on a parchment-lined baking tray and freeze or refrigerate until firm, 5-10 minutes.
Once hardened, remove from the tray and enjoy.
