Ingredients

  • cup unsweetened creamy almond butter
  • 1 tsp vanilla extract
  • ½ cup + 1 tbsp almond flour
  • 2 Tbsp honey
  • 1 Tbsp water
  • ½ cup No sugar-added chocolate chips * note: ½ cup chocolate chips fully covers 14 truffles, however, you may want to melt more because some will stick to the bowl and make it more difficult to coat

Instructions

  • In a medium-sized bowl, mix the almond butter, vanilla, almond flour, honey and water until a dough-like texture forms.
  • Roll the almond mixture into 1-tablespoon balls.
  • Place the balls on a plate, into the freezer for 10 minutes until firm.
  • In a microwave-safe bowl, microwave the chocolate chips in 30-second increments, mixing in between. This should take about 60-90 seconds. Once melted, dip the balls into the melted chocolate until coated, lift them out of the chocolate with 2 forks to let excess chocolate drip off, and create nicely coated truffles.
  • Place the coated balls on a parchment-lined baking tray and freeze or refrigerate until firm, 5-10 minutes.
  • Once hardened, remove from the tray and enjoy.

    Absolutely delicious, Love this recipe! My friends and neighbors are huge fans, so now I’m making this fairly often. I have experimented with sugar free white chocolate as well as sprinkling the tops with various chopped nuts. My only critique is the yield. I followed the measurements exactly, but only netted about half the quantity stated. Now I triple the recipe. I find that keeping the coating on the thin side improves the overall product and produces a more delicate truffle. Thank you for this wonderful healthy treat!
