Shrimp and Diabetes

Shrimp is one of the most underrated proteins when it comes to building balanced meals. It’s lean, quick-cooking, and naturally low in carbohydrates. This makes it a great choice for anyone looking for diabetes friendly shrimp recipes that don’t sacrifice flavor.

In this cilantro lime shrimp bowl, we marinate our shrimp in fresh lime juice, garlic, olive oil, and cilantro for a bright, zesty flavor profile that pairs perfectly with the coconut rice.

Why this cilantro lime shrimp bowl is blood sugar friendly

When it comes to building a blood sugar friendly shrimp bowl, balance matters. This recipe combines protein, healthy fats, and moderate carbohydrates to help support steadier blood sugar levels after meals.

The shrimp provides 30+ grams of protein per serving, which helps slow digestion and reduce the blood sugar impact of the meal. Protein is especially important for people with diabetes because it promotes satiety and can help prevent energy crashes or overeating later.

The rice base is where this recipe gets extra smart. By combining traditional white rice with cauliflower rice, you lower the overall carbohydrate load while adding volume and nutrients. This makes it a lighter, more balanced low carb shrimp bowl compared to bowls made with rice alone. Cauliflower also adds fiber, which supports slower glucose absorption.

The addition of full-fat coconut milk and olive oil contributes healthy fats, another important component for blood sugar management. Fat helps slow gastric emptying, which can reduce blood sugar spikes and improve meal satisfaction.

Nutrition benefits of shrimp

Shrimp is a powerhouse ingredient in healthy shrimp bowl recipes because it delivers high-quality protein with relatively few calories. It’s also rich in selenium, an antioxidant mineral that helps protect cells from oxidative stress, which is particularly important for people managing diabetes.

Shrimp also provides vitamin B12 for nerve health and iodine for thyroid support. Since diabetes can increase the risk of nerve-related complications over time, including B12-rich foods like shrimp can be a smart addition to your routine.

Ingredients

  • 1 lb shrimp peeled and deveined
  • Juice from 1 lime
  • 2 garlic cloves minced
  • 1 Tbsp olive oil
  • 1 tsp chili powder optional
  • 1/2 cup white rice
  • 2 cups cauliflower rice frozen is ok, but thaw and drain first
  • 3/4 cup canned full fat coconut milk
  • 3/4 cup low sodium chicken broth or veggie broth
  • 1/4 cup fresh cilantro chopped
  • Salt and pepper as desired

Instructions

  • Add shrimp to a large bowl with the lime juice, garlic, olive oil and chili powder if using. Let it sit to marinate for at least 15 minutes at room temperature or up to 24 hours in the fridge.
  • Meanwhile, start cooking the rice. Add rice, cauliflower rice, coconut milk and veggie broth to a medium saucepan. Bring to a boil and let simmer for 15-20 minutes or until the liquid is fully absorbed and the rice is fluffy. Brown rice might need 10-15 minutes longer.
  • Now back to the shrimp. Heat a skillet over medium heat. Add the shrimp and the marinade to the pan. Cook for 3-4 minutes per side or until shrimp is fully opaque.
  • Sprinkle in the fresh cilantro in the last minute of cooking. Stir to combine and serve over rice. Season with salt and pepper as desired.

Notes
