Pork loin is such an easy piece of meat to cook and pairs well with so many flavors. This sheet pan pork loin and potatoes combo is the perfect way to get dinner prepped in no time.

What makes oven roasted pork loin so easy?

Oven roasted pork loin is not only delicious but also super duper easy. You just rub your spices and seasonings on and let that fat cap (see below for more info if you’re not familiar with this cut of pork) season the rest of the meat as it cooks. 

Pork loin v. Pork tenderloin

Pork loin comes from the area of the pig between the shoulder and the top of the leg. You can buy it bone-in or boneless. Pork loin is a lot easier to cook than people think and are quite simple to prepare either roasted or grilled.

Pork tenderloin comes from a portion of the full pork loin and is much smaller in size than a pork loin roast. It is equally flavorful, but does require different cooking methods than pork loin.

Which boneless pork loin roast to buy

What temp do you cook pork to?

Depending on the cut of meat, you’ll need to cook your pork to 145-160 degrees farenheit. For this sheet pan pork loin and potatoes recipe, I recommend 150-160 degrees.

How to cook pork loin

First, preheat your oven to 375 degrees. Next spray a 9×13 (or larger) baking dish or pan with your preferred cooking oil spray and set the pan aside.

Place your cut potatoes and onions in a large plastic bag along with the avocado oil and Italian seasoning. Seal the bag and shake vigorously to fully coat the potatoes and onions. Set these aside along with your baking dish/pan.

Remove the pork loin from it’s packaging and place it in your oiled 9×13 pan. Make sure the “fat cap” (the side that is white and has a large strip of fat on it) is facing up. Using a sharp knife gently score the top of the fat cap. You don’t need to cut very deep, just enough to make a slight indentation.

Rub the minced garlic into the top of the fat cap. Then sprinkle your salt and pepper evenly over the fat cap.

Add the seasoned onions and potatoes to the sides of the pan.

Place the pan in the center of the bottom rack of your oven and cook the pork loin for 75-85 minutes or until it has reached an internal temperature of 150-160 degrees.

Remove the sheet pan pork loin and potatoes from the oven and let it rest for five minutes before serving.

Ingredients

  • 1 lb small potatoes of choice cut into 1in pieces
  • 1 medium yellow onion sliced
  • 2 Tbsp avocado oil
  • 2 Tbsp Italian seasoning blend
  • 1/2 cut boneless pork loin 4-5 lbs
  • 2 Tbsp minced garlic
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • Preheat your oven to 375 degrees.
