No-Bake Cottage Cheese Lemon Cheesecake Bites {4g Protein Each}

These No-Bake Cottage Cheese Lemon Cheesecake Bites are one of my favorite ways to turn cottage cheese into dessert! They have a creamy lemon cheesecake filling, plenty of fresh lemon flavor, and a nutty almond flour and pecan crust underneath. There’s no oven involved, which is especially appreciated when I want cheesecake but have zero interest in actually baking one.

I specifically chose cottage cheese and Greek yogurt for the filling because they add protein while still blending beautifully with cream cheese. The cream cheese keeps that familiar cheesecake richness, while the cottage cheese and yogurt give me a little more nutrition to work with. And instead of a traditional graham cracker crust, I went with almond flour and pecans for a buttery crunch plus some fat and fiber!

Why I Like These Cheesecake Bites for Blood Sugar Management

As a diabetes dietitian, I don’t judge a dessert by its sugar content alone. I want to know the total carbohydrate, protein, fat, fiber, serving size, and what else I’m eating with it.

Each cheesecake bite has 5g carbohydrate, 4g protein, 6g fat, 1g fiber, and 3g sugar. Cottage cheese and Greek yogurt contribute protein, while the almond flour and pecans bring fat and a little fiber to the crust.

That combination is intentional. The 2026 American Diabetes Association Standards of Care notes that protein and fat can affect post-meal glucose response, and that individual responses to mixed meals can vary.

That last part matters! One dessert will not affect every person’s blood sugar exactly the same way. I like using the full nutrition profile as useful information, then considering portion size, medications or insulin, and the rest of the meal. It’s the same approach I use when talking about blood sugar balance and choosing the right foods.

Before You Get Started

  • Soften the cream cheese first. Cold cream cheese is much harder to blend smoothly into the filling.
  • Use 18 mini muffin liners. These are mini cheesecake bites, and the smaller liners give you the portion size the recipe was tested with.
  • Make some room in the freezer. The entire muffin tin needs to sit flat while the cheesecake bites firm up.

Ingredients for Cottage Cheese Lemon Cheesecake Bites

  • Almond flour: Use finely ground almond flour rather than coarse almond meal. It makes a more compact crust.
  • Pecans: Finely chop them before mixing them into the crust.
  • Unsalted butter: Melt it before adding it to the almond flour mixture.
  • Maple syrup: A small amount sweetens both the crust and filling. I haven’t tested this recipe with alternative sweeteners, so I recommend sticking with maple syrup if you want the same texture.
  • Low-fat cottage cheese: This is what I used when developing the recipe. It blends right into the cheesecake filling once processed.
  • Cream cheese: Regular cream cheese gives us the classic richness and tang I want in cheesecake.
  • Plain Greek yogurt: Stick with plain yogurt so you can control the sweetness and keep the lemon flavor front and center.
  • Fresh lemon juice and zest: Use a fresh lemon here! The zest gives the filling a much brighter citrus flavor than juice alone.
  • Vanilla extract: A little vanilla rounds out the tart lemon and dairy flavors.
  • Salt: You only need a pinch in both layers.

How to Make No-Bake Cottage Cheese Cheesecake Bites

Make the Almond-Pecan Crust

Combine the almond flour, finely chopped pecans, melted butter, maple syrup, and salt. Divide the mixture evenly between 18 lined mini muffin cups and press it firmly into the bottoms.

Blend the Lemon Cheesecake Filling

Add the cottage cheese, softened cream cheese, Greek yogurt, maple syrup, lemon juice, lemon zest, vanilla, and salt to a blender or food processor. Blend until completely smooth, scraping down the sides as needed.

Fill the Cheesecake Bites

Divide the filling evenly between the prepared crusts. Add your toppings, if using.

Freeze Until Firm

Freeze the cheesecake bites for 2–3 hours, or until firm. Let them sit at room temperature for 5–10 minutes before serving so the filling softens to a creamy cheesecake texture. 

Tips for the Best Cottage Cheese Cheesecake Bites

  • Freeze the muffin tin on a level surface. The filling is fairly soft when it goes into the cups. Keeping the pan flat gives you even layers and prevents the filling from settling to one side.
  • Taste the filling before you portion it. There are no raw eggs here, so this is your chance to check the lemon flavor. If you want it brighter, I’d add a little more zest rather than extra juice so you aren’t adding more liquid.
  • Pat fresh berries dry before adding them. Extra water on the berries can freeze into little ice crystals on top of the cheesecake bites.
  • Give the first bite a few minutes before serving the whole batch. Freezers vary. Start around the 5-minute mark and check the texture. You want the filling creamy enough to bite through easily while still holding its shape.
  • Add a little fresh zest right before serving. Zest added at the end has the strongest lemon aroma, which is an easy way to make the citrus flavor pop without changing the filling.

Variations and Substitutions

I’d keep the crust and filling ratios as written since that’s how I tested the recipe. The easiest way to change these up is with the topping!

  • Blueberry lemon: Top each bite with a fresh blueberry or two.
  • Raspberry lemon: Add a fresh raspberry for a little extra tartness.
  • Extra lemon: Finish with more finely grated lemon zest right before serving.

Storage

Store leftover cheesecake bites in an airtight container in the freezer.

Let individual bites sit at room temperature for about 5–10 minutes before eating so the filling can soften. The current recipe card uses freezer storage as the tested method, so I would not switch these to refrigerator storage.

FAQs About Cottage Cheese Cheesecake Bites

Can You Taste the Cottage Cheese?

The cottage cheese flavor is very mild once it’s blended with cream cheese, Greek yogurt, lemon, maple syrup, and vanilla. You get the tang of cheesecake, but the cottage cheese itself isn’t the dominant flavor.

Do No-Bake Cottage Cheese Cheesecake Bites Need Gelatin?

Not this recipe! The bites firm up in the freezer, so there’s no gelatin in the filling.

Can I Make These in a Regular Muffin Tin?

I developed and tested this recipe as 18 mini cheesecake bites, so that’s the size I recommend. A standard muffin tin would make much larger cheesecakes and would likely change the freezing and serving time.
