Why Maple Dijon Salmon Works for a Diabetes-Friendly Meal

Salmon is a great protein source for people who pay attention tot heir blood sugars. As a registered dietitian myself, I love that it’s rich in omega-3 fatty acids and naturally low in carbs. It pairs beautifully with roasted vegetables for a nourishing, balanced meal.

The glaze is made with a small amount of maple syrup and Dijon mustard that adds just the right amount of sweetness without overloading on sugar… which makes it a great choice for any occasion.

Nutrition Benefits

  • High Protein: Each serving provides over 30g of protein, making it an excellent high protein salmon sheet pan dinner that helps keep you full and promotes more stable blood sugars.
  • Low Carb: Paired with non-starchy vegetables (broccoli and Brussels sprouts… two of my faves!), this is a naturally low carb roasted salmon and vegetables dish.
  • High Fiber: Fiber from the vegetables helps slow down digestion, making it a smart high fiber dinner for blood sugar control.
  • Healthy Fats: Omega-3s from salmon and olive oil support heart health.

Tips for a Healthy Fall Salmon Dinner

  • Adjust the glaze: For a lower carb content, use sugar-free maple syrup instead of traditional maple syrup.
  • Switch up veggies: Cauliflower, zucchini, or asparagus could also work well in this healthy fall salmon dinner for diabetes. Make sure to adjust the cook time based on the type of veggies you’re cooking.
  • Meal prep friendly: Leftovers reheat well for lunch the next day!

Ingredients

For the salmon:

  • 3 Tbsp maple syrup
  • 2 Tbsp Dijon mustard
  • 1 Tbsp olive oil
  • 1 Tbsp low-sodium soy sauce or tamari sauce
  • 2 garlic cloves minced
  • 1 tsp lemon juice
  • ½ tsp paprika
  • Salt & pepper to taste
  • 4 6oz salmon filets

For the veggies:

  • 2 cups broccoli florets
  • 2 cups Brussels sprouts halved
  • 2 medium carrots sliced
  • 1/4 cup olive oil
  • 1 tsp garlic powder
  • ½ tsp dried rosemary
  • Salt & pepper to taste

Instructions

  • Preheat your oven to 400°F and line a large sheet pan with parchment paper.
  • Whisk together the maple syrup, Dijon mustard, olive oil, soy sauce, garlic, lemon juice, paprika, salt, and pepper. This is your salmon glaze. Set this aside for now.
  • Toss the broccoli, Brussels sprouts, and carrots with the remaining olive oil, garlic powder, rosemary, salt, and pepper. Spread the vegetables evenly on the sheet pan. Roast in your oven for 15 minutes.
  • Remove the pan from the oven and push the veggies to the side to make room for the salmon filets. Place salmon fillets skin-side down on the pan and brush generously with your prepared glaze.
  • Return the pan to the oven for 12–15 minutes, or until salmon flakes easily with a fork and veggies are tender. Broil for 1–2 minutes for caramelization if desired.
  • Once finished, remove the pan from the oven and drizzle any extra glaze over the salmon and veggies.
