Growing up, my mom made a pasta dish that we simply called “penne pasta.” No detailed recipe name was needed. Everyone in our family knew exactly what we were talking about, and we were always happy to see it on the table!
This Cheesy Ground Lamb and Spinach Pasta Bake is my latest spin on that family favorite. Tender penne is mixed with savory ground lamb, marinara, baby spinach, and plenty of creamy Havarti, then baked until the edges are bubbling and the Parmesan on top is lightly browned. It makes a full 9-by-13-inch pan, so dinner is handled and you’ll probably have lunch waiting for you tomorrow too.
This is also a high-protein pasta bake for people living with diabetes who still want a big, comforting bowl of pasta. Ground lamb and cheese provide protein and fat, spinach adds vegetables, and a bean-based pasta can add even more protein and fiber. Pairing pasta with protein, fat, and fiber can help support a steadier glucose response. You can read more about how carbohydrates, protein, and fat affect blood sugar!

Before You Get Started
- Choose a short pasta shape. Penne or another short pasta that holds sauce well will give you the best texture.
- Use a seasoned marinara sauce. This recipe has a short ingredient list, so the sauce provides much of the garlic, herb, and tomato flavor. Choose one you already enjoy.
- Shred the Havarti while it is cold. Soft Havarti can be difficult to shred at room temperature. Keep it refrigerated until you are ready to use it, or place it in the freezer for 10 minutes first.
What You Need to Make Ground Lamb Pasta Bake
- Avocado oil: Use a tablespoon to sauté the onion and keep the ground lamb from sticking. Olive oil also works.
- Yellow onion: Cooking the onion until lightly browned gives the ground lamb pasta bake a sweeter, more developed flavor.
- Ground lamb: Ground lamb has a rich, savory flavor that pairs well with tomato sauce and creamy cheese. This ground lamb recipe with spinach and marinara is also a great place to use lamb if you usually reach for beef.
- Penne pasta: Use penne or another short pasta that holds sauce well. Traditional, whole-wheat, gluten-free, and bean-based varieties can all work. Not sure which variety to use? My guide to diabetes and pasta compares traditional, whole-wheat, chickpea, and vegetable-based options!
- Baby spinach: A full 5-ounce bag wilts into the pasta with almost no prep.
- Marinara sauce: Use a 24-ounce jar of your favorite seasoned marinara. A thicker sauce coats the pasta nicely and keeps the casserole from becoming watery.
- Havarti cheese: Havarti melts into a smooth, creamy sauce and gives this Havarti cheese pasta bake its signature richness.
- Parmesan cheese: Parmesan browns across the top and adds a salty finish.

How to Make Cheesy Ground Lamb and Spinach Pasta Bake
Cook the Onion
Preheat a large skillet over medium-high heat. Add the avocado oil and chopped onion.
Cook for 10 to 15 minutes, stirring occasionally, until the onion is soft and beginning to brown.
Brown the Ground Lamb
Add the ground lamb to the skillet. Break it into small crumbles with a spatula and cook until no pink remains.
The lamb should reach 160°F before it is mixed with the remaining ingredients. Drain excess grease if needed.
Cook the Pasta
While the lamb cooks, bring a large pot of water to a boil. Cook the penne according to the package directions, stopping when it is just al dente.
Drain the pasta well.
? Tip: Bean-based pasta can become soft or sticky when overcooked. Start checking it a minute or two before the package time and rinse it after draining if the brand recommends it.
Mix the Pasta Bake
Add the drained pasta to the skillet with the lamb and onion.
Stir in the baby spinach, marinara sauce, and shredded Havarti. Continue stirring until the spinach begins to wilt and the cheese is mostly melted.
If your skillet is not large enough, mix everything in the pasta pot or a large bowl. We will not award extra points for balancing a pound of pasta over the stove.
Transfer to the Baking Dish
Lightly grease a 9-by-13-inch baking dish.
Spoon in the lamb and spinach pasta mixture and spread it into an even layer. Sprinkle the Parmesan over the top.
Bake Until Bubbling
Bake at 350°F for 20 to 30 minutes.
The pasta bake is ready when the sauce bubbles around the edges and the Parmesan is lightly browned. Let it rest for about five minutes before serving.

Variations and Substitutions
- Use mozzarella instead of Havarti: Mozzarella is usually less expensive and still gives you a creamy, cheesy pasta bake recipe. Use an equal amount.
- Reduce the cheese: You can use four ounces of Havarti instead of eight. The pasta will be less creamy but will still have plenty of flavor.
- Change the greens: Replace the spinach with chopped kale, Swiss chard, or another leafy green. Kale may need a few extra minutes in the skillet to soften.
- Add broccoli: Stir in small steamed broccoli florets for another vegetable option.
- Use another ground meat: Ground beef, turkey, chicken, or pork can replace the lamb. The flavor will change, but the method stays the same.
- Try another pasta: Penne, rigatoni, rotini, ziti, or small shells will all hold the sauce well.
- Make it gluten-free: Use your favorite gluten-free short pasta and check the marinara and cheese labels.
- Add Italian seasoning: Stir one or two teaspoons into the lamb if your marinara has a mild flavor.
- Add heat: Crushed red pepper flakes add a little warmth without changing the basic recipe.
Helpful Tips
- Taste the mixture before baking. Marinara and cheese vary in saltiness. Taste once everything is combined and adjust the seasoning if needed.
- Watch the top during the final few minutes. Parmesan can move from golden to overly browned quickly.
- Let the casserole rest before serving. Five minutes gives the melted cheese and sauce time to settle, making the pasta easier to scoop.
What to Serve With Lamb and Spinach Pasta
This family-size pasta bake with ground meat and cheese already includes pasta, protein, vegetables, and fat, so the sides can stay simple.
Try serving it with:
- A green salad with vinaigrette
- Roasted broccoli or Brussels sprouts
- Green beans
- Garlic bread
- Sautéed zucchini
- Cucumber and tomato salad
- Steamed asparagus
Choose your side based on the pasta portion and your usual carbohydrate needs. A salad or non-starchy vegetable adds volume and fiber, while bread makes the meal more substantial!

Storage and Reheating
Thaw the frozen pasta bake overnight in the refrigerator before baking.
Store leftover pasta bake in an airtight container in the refrigerator for three to four days.
Reheat individual portions in the microwave until hot. Cover the dish loosely so the pasta retains moisture.
To reheat a larger portion, place it in an oven-safe dish and add a small spoonful of marinara or water if it looks dry. Cover with foil and bake at 350°F until heated through.
You can freeze cooked pasta bake in individual portions for easier lunches. Wrap each portion tightly and store it in a freezer-safe container for up to two months for the best texture.
Thaw overnight in the refrigerator before reheating.
Make Ahead Instructions
You can assemble this easy weeknight pasta bake with ground lamb up to one day ahead.
Cook the lamb and pasta, mix the casserole, and transfer it to the baking dish. Let it cool, cover it tightly, and refrigerate.
Set the dish on the counter while the oven preheats, then bake as directed. A cold casserole may need an additional five to ten minutes.
You can also divide the mixture between two smaller baking dishes. Bake one for dinner and freeze the second before baking. Cool the ingredients completely before wrapping the freezer portion tightly.
Frequently Asked Questions
What Does Ground Lamb Taste Like in Pasta?
Ground lamb has a richer, slightly earthier flavor than ground beef. The marinara, browned onion, spinach, and Havarti soften that richness, so the finished pasta does not taste overwhelmingly like lamb.
If your family is new to lamb, you can use half ground lamb and half ground beef the first time.
Why Did My Pasta Bake Turn Out Dry?
A dry pasta bake usually needs more sauce or less oven time. Marinara sauces vary in thickness, so add another ½ cup before baking if the mixture already looks dry.
Start checking the casserole after 20 minutes. If the top is browning before the center is hot, cover the dish loosely with foil for the remaining bake time.
Can I Halve the Recipe or Divide It Between Two Pans?
Yes! For a half batch, divide all the ingredients in half and assemble the pasta in an 8-inch square baking dish.
You can also divide the full recipe between two 8-inch square pans or similar baking dishes. This works well if ten servings feels a little ambitious for your household.
Start checking smaller pans after 20 minutes since they may finish sooner than a full 9-by-13-inch casserole.
Can I Use Leftover Cooked Lamb?
Yes. Crumbled cooked lamb works well in this recipe.
Sauté the onion first, then stir in the cooked lamb just long enough to warm it. Continue with the pasta, spinach, marinara, and cheese.
