Avocado Kale Pesto

Avocado Kale Pesto

1 avocado, peeled and pit removed
1/2 cup Chosen Foods avocado oil
1 cup chopped kale, packed
2 Tbsp minced garlic
1/2 tsp sea salt
1/2 tsp black pepper
2 tsp dried basil

Add all ingredients to a Cuisinart food processor. Using the S-blade, process for 4-5 minutes until smooth. Use with your favorite vegetables, pasta, quinoa, or rice and enjoy!

Did you know it is completely ok to crave carbs?? 😱 Shocker, I know... especially in our current keto-obsessed culture 🙄☺️ Carb cravings are often labeled as being a bad thing, when in reality that's just your body's way of telling you what it needs to function and perform properly 👍 And yes, there are some forms of carbs that will leave you feeling better than others (especially if you're diabetic like me), but have you ever noticed how carbs, regardless of type, are amazingly comforting?! That's because they are our brain's preferred source of fuel 🤯 So whether it's in the form of starchy vegetables like a sweet potato, or using said starchy vegetables in a grain free muffin (like @soozysmuffins ), make sure to eat those carbs. Because let's be honest, carbs make us happy, and happy people is a good thing 😊❤️ .

Because everyone needs a good dose of reality on social media ☺️ I get asked all the time how I get my kids to eat their vegetables or other foods that kids may commonly turn their noses up at, and my answer is probably not what people are hoping for... “over half the time they don’t eat them” 😱 yes, you read that correctly. And you know how much stress that causes me?? ZERO. NONE. NOT AT ALL. and you get the idea ☺️ it’s my job to offer them an assortment of healthy and fun choices (like those @perfectlyfreetreats fruit bites in the middle there #sponsored ), some that they like and are familiar with and others that are new and/or I know may not be their favorites (like red bell pepper which is occasionally eaten and hard boiled eggs... they love them scrambled but I’m working on exposing them to other ways of eating them 🍳) 🤷🏻‍♀️ It’s not my job to “make” them eat anything. Like this lunchbox... It’s not about whether or not they’re going to eat all of it… But it’s about the things that I choose to expose them to, so that one day they will willingly eat all of these things. Consistency is key mama 😘

I’m trying to introduce my girls to some new (to them ☺️) red fruits and veggies this Valentine’s Day by pairing them with some of their favorite crackers and some of their current red favorites. They both love apples and watermelon, and sometimes like red bell pepper... but grape tomatoes, pomegranate arils, and blood oranges are all new for them, so I was super curious which ones they’d want to try and which ones they’d pass on 🤷🏻‍♀️❤️ and I made sure to pair it all with some of their favorite @miltonscraftbakers GF crackers 👍 The cheddar ones are their favorite... you can grab some at your local @sprouts or @wholefoods ! ❤️

Do you meal prep? 👍 or 👎?? I don’t usually (at least in the traditional sense), but this is my kind of #mealprepsunday 🙌 quick and easy bento box breakfast (or lunch) option packed up and ready to eat ❤️ As easy as this might look to throw together as you “run out the door” ... when your mornings involve small kids, something like this just isn’t doable (at least not in our house anyways) so packing up some boxes like this will definitely make for easier mornings this week 👍 what’d you prep today??

Fact: marriage only works if you make the daily choice to put your partner’s needs in front of your own. And some days that choice is easy because you “feel” in love with them, but other days it’s not. Other days you’re mad, or hurt, or resentful (you fill in the blank there)... but those are the days where love, true love, really steps in and you make the conscious choice to stick it out and put that person’s needs ahead of your own unconditionally ❤️ .

O pizza, how I love you 😍🍕😍🍕... so much so that we have pizza night in our house almost weekly. Sometimes the toppings are a bit out there, but I’ve always felt that pizzas are like salad, you can really put ANY toppings on them and you can’t go wrong 👌

But let’s get back to how much I love pizza... like I REALLY love it, and I may be known to stuff my face when it’s around 🤷🏻‍♀️but honestly that just leaves me feeling stuffed and with a blood sugar spike a few hours later which never feels good... so, I’ve learned to pair it with a vegetable of choice (like 🥦) and I’ll eat that first, then I give myself the freedom to eat as much pizza as I want until I feel full. Sometimes it’s one piece, and sometimes it’s three 🍕🍕🍕🤷🏻‍♀️ and I know regardless I’ve gotten a good balance of carbs, protein, and fat 👍 what’s the best pizza combo youve ever had?
