Ingredients

  • 16 oz cooked chicken breast chopped I used a rotisserie chicken for convenience
  • 1/3 cup diced green onion
  • 1 medium jalapeño, diced optional
  • 1 cup low-fat cottage cheese blended until smooth
  • 1/2 cup Nonfat Greek yogurt
  • 1/3 cup buffalo sauce
  • 1/2 cup low-fat shredded mozzarella for mixture
  • 1/2 cup low-fat shredded mozzarella to top
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder

Instructions

  • Preheat the oven to 375 degrees.
  • Dice the chicken, green onion, and jalapeno into small pieces.
  • In a blender or using a hand-held immersion blender, blend the low-fat cottage cheese until smooth.
