How to Make Crunchy Pistachio Chicken Salad

Hard-Boil the Eggs

Place the eggs in a saucepan and cover them with water.

Bring the water to a rolling boil. Turn off the heat, cover the pan, and let the eggs sit for 12 minutes.

Transfer them immediately to a bowl of ice water and let them cool completely before peeling and chopping.

Prepare the Ingredients

Chop the cooked chicken, hard-boiled eggs, pickles, celery, and pistachios.

Hard-boiled eggs can be prepared up to one week ahead, and the cooked chicken can be prepared three to four days ahead. Once everything is mixed, follow the shorter three-day storage window for the finished salad!

Keep the salad refrigerated until serving. Do not leave it at room temperature for longer than two hours, or longer than one hour when the temperature is above 90°F.

I do not recommend freezing it. The yogurt and mayonnaise dressing may separate, and the celery and pickles lose their crisp texture after thawing.

Frequently Asked Questions

Can I Use Rotisserie Chicken, Chicken Breast, or Canned Chicken?

Yes! You can use any fully cooked chicken you enjoy.

For rotisserie chicken, remove the skin and bones before chopping. Cooked chicken breast will give you a slightly leaner and firmer salad than thighs.

Canned chicken also works. Drain it very well and break up any large pieces before measuring about three cups.

Can I Leave the Hard-Boiled Eggs Out?

Yes. The salad will have a little less protein and a different texture, but you do not need to replace the eggs with another ingredient.

You may need slightly less dressing without the six chopped eggs, so add the mayonnaise and Greek yogurt mixture gradually.

Why Did My Chicken Salad Turn Watery?

The most common causes are wet pickles, warm ingredients, or vegetables releasing moisture during storage.

Drain the pickles thoroughly and cool the chicken and eggs before mixing. If the salad has already become watery, stir in a little extra chopped chicken, celery, or pistachios rather than immediately adding more dressing.

    Wonderful recipe! The only change I made was to add about 1/2 cup of diced, unpeeled, sweet red apple. I liked just a little more of an extra crunch. My family likes this in our menu rotation.
